Blackberry Crumb Bars

Ingredients:

1-1/2 c. flour
1/4 c. sugar
1/4 c. brown sugar, packed
1/2 tsp. baking powder
1/2 c. salted butter
1 lg. egg yolk
2 c. fresh blackberries
1 Tbs. lemon juice
1/4 c. sugar
1 Tbs. cornstarch

Directions:

  1. Preheat oven to 375 degrees and spray an 8×8 pan with baking spray.
  2. Add flour, sugar brown sugar, baking powder, butter and egg yolk to a food processor. Pulse until crumbly dough begins to come together.
  3. Add half the dough to the pan and press down in an even layer.
  4. In a large bowl, mix the blackberries, lemon juice, sugar and cornstarch and pour over crust in pan.
  5. Crumble the remaining flour mixture over the top of the blackberries.
  6. Bake for 40-45 min. until golden brown.
