Ingredients:
1-1/2 c. flour
1/4 c. sugar
1/4 c. brown sugar, packed
1/2 tsp. baking powder
1/2 c. salted butter
1 lg. egg yolk
2 c. fresh blackberries
1 Tbs. lemon juice
1/4 c. sugar
1 Tbs. cornstarch
Directions:
- Preheat oven to 375 degrees and spray an 8×8 pan with baking spray.
- Add flour, sugar brown sugar, baking powder, butter and egg yolk to a food processor. Pulse until crumbly dough begins to come together.
- Add half the dough to the pan and press down in an even layer.
- In a large bowl, mix the blackberries, lemon juice, sugar and cornstarch and pour over crust in pan.
- Crumble the remaining flour mixture over the top of the blackberries.
- Bake for 40-45 min. until golden brown.
