Ingredients:
- (4) 5-7oz chicken breasts-pounded to an even thickness
- 2 tsp. Italian seasoning
- 2 tsp. sea or kosher salt
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. cracked black pepper
- 1 Tbsp. olive oil
- 8oz fresh mozzarella, sliced into 8 even pieces
- (2) tomatoes, sliced into 1/2" slices
- Fresh basil to taste
- Aged balsamic vinegar to taste
Directions:
1) Place one chicken breast in between waxed paper or plastic wrap. Using a rolling pin, pound the chicken breast to an even thickness of a little less than 1″. Repeat for remaining breasts.
2) Combine the Italian seasoning, sea salt, garlic powder, onion powder, and pepper in a small bowl and stir to combine.
3) Brush chicken with olive oil, then sprinkle with seasoning blend. Flip the chicken oven, then oil the other side.
4) Heat a grill or pan to high heat and cook 5-6 minutes per side until the internal temp reads 155F.
5) Top each breast with 2 slices of mozzarella. Continue grilling or cooking 3 more minutes.
6) Move chicken breasts to a platter and top with slices of fresh tomatoes, sprinkle with fresh basil, salt and pepper and drizzle with balsamic vinegar.
