Fresh Apple Cake

Ingredients:

2 c. sugar
1 c. vegetable oil
3 eggs
3 c. flour
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla
1 c. nuts (pecans or walnuts)
3 c. diced apples

Directions:

  1. Cream sugar and oil. Add 1 egg at a time and beat.
  2. Sift together dry ingredients and add to sugar/oil mixture.
  3. Add vanilla then fold in nuts and apples.
  4. Pour into a greased and floured bundt pan.
  5. Start with a cold oven and bake 1hour and 15 min. at 300 degrees.

Icing:

1 c. brown sugar
1/4 c. evaporated milk
1 stick of butter

  1. Put all ingredients in a pan and bring to a rolling boil. Remove from hear and cool. Beat with a mixer until shinny and pour over warm cake.
