Zucchini Cake

Ingredients:

3 c. shredded zucchini
2 c. sugar
3/4 c. vegetable oil
4 eggs
2 1/2 c. flour
2 tsp. cinnamon
1 tsp. salt
1 tsp baking powder
1/2 tsp. baking soda
1 c. chopped pecans, optional

Directions:

  1. Preheat oven to 350 degrees. Grease a 9X13 pan.
  2. In a large bowl whisk zucchini, sugar, oil and eggs.
  3. Add the rest of the ingredients and stir until mixed.
  4. Bake 35-40 min.

Frosting:

Mix 6 oz softened cream cheese with 1 stick softened butter. Add 1 tsp. vanilla, 4 c. powdered sugar and 2-4 Tbs. milk until desired consistency. Mix well and spread onto cool cake.
